Bruschetta

This recipe is so quick and easy to make. It is a great starter, however Sergio and I love to make it bigger and have as a main course with a side of something, whether it be salad , fries or onion rings (why not check out my cider battered onion rings recipe )


Ingredients

Serves 2 as main or 4 as starter


4 x Ciabatta

1 x Red Onion

4 x Tomato's

1 x Handful of fresh basil leaves

1 x Pinch of salt

3 x tbsp of Extra Virgin Olive Oil

1 x tbsp of Butter ( alternative)

4 x Garlic Cloves

- optional Balsamic glaze


 

Method


Step 1 : Chop the tomatoes and red onion ,shred the basil leaves, then add the salt , pepper and Extra virgin oil : combine and mix together in a large bowl


Step 2: Then take your garlic and finely grate it (or use a garlic press)


Step 3 : Combine your prepared garlic with the butter or butter alternative by folding in with a spoon.


Step 4 : Cut your ciabatta in half ( so it opens up to give wide base)


Step 5 : Spread the sliced ciabatta with your garlic butter


Step 6 : Place on a baking tray and grill for a few min: just until the bread is toasted and the garlic butter has melted in.At this point remove from grill and add the bruschetta mix evenly over the ciabattas ( leave a small amount of mix for later)


Step 7 : Place back under the grill for about 7 minutes

(keep checking to ensure no burning)


Step 8 : Remove from the grill and display onto your desired serving dish. Then sprinkle the rest of the uncooked bruschetta mix onto the top.


Step 9 : Decorate with desired amount of balsamic glaze


Eat and enjoy :)
