Baby -Sweet Potato Pancakes

This recipe may have come from baby weaning but is super tasty and its great for the whole family . If your not making for a little one maybe add a little salt to your taste. It is so easy to make and a great one for batch cooking and putting in the freezer.

Ingredients

Serves approx. 30-35 mini pancakes ( perfect for finger food)

700g Sweet potato

250ml coconut milk

140g Gluten Free flour

2x Tsp Nutmeg

2x eggs

half tsp garlic granules

- optional shredded fresh basil


Method


Step 1 : Measure out your ingredients

Step 2: Peel and chop the sweet potato and add to pan of water. Bring to the boil, then simmer until soft .

Step 3 : Then drain the sweet potato


Step 4 : Transfer drained sweet potato into a mixing bowl and mash until desired texture for your little ones needs and abilities.

Step 5 : Mix in all other ingredients


Step 6 : Take a non stick frying pan (or grease normal frying pan) and slowly warm


Step 7 : Use a ladle or spoon to put desired amount of mixture into the pan and cook one side, then flip and cook the other side.


Step 8 : Allow to cool to desired temperature before serving .


Step 9 : To freeze, place pancakes onto baking tray and put in the freezer. Once frozen place desired quantities into a freezer bag or individual Tupperware . Then when required just pop into the toaster to defrost and warm them.
